Is there a chart somewhere with torque settings for the metric bolts in the airframe -- through wood and through metal? I did some searching in the forum and didn't hit on anything specific.

Does not exist a torque chart for bolts in the wood. You just must feel when the bolt/nut is tight. For metal to metal you can use standard torque for metric hardware (check here: http://www.tpub.com/content/filters/TM-10-4330-237-13P/css/TM-10-4330-237-13P_105.htm) metric bolts are 8.8.
